The Paramount is pleased to welcome our first new chef in 12 years. Executive Chef Diego Osorno has spent months studying our style. He joined our team in late spring 2017 and brings with him enthusiasm for from-scratch cooking. Small changes have crept into the menu, like house salad dressings made from strawberries soaked for days in pure balsamic vinegar, and fresh hand-rolled pasta on the entree menu. And big changes have been announced, like an all new dinner menu with items like hand-rolled street empanadas. We love the changing nightly specials featuring inventive dishes like Crispy Fried Seafood Cannelloni or a Tomato Braised Lamb Shank over caponata vegetables, braised green beans, and basil gremolata. But all of your favorite items remain the same, like our Paramount Burger with cheddar, applewood smoked bacon, and hand cut onion rings. And most importantly, our famous breakfast and lunch dinner still has all of your favorite dishes, the way they’ve always been prepared.
